There's nothing better than a glass of sharbat e ablimu, when the sun is out, and you're in need of some refreshment. We will show you how to make the citrus concentrate, so there will be plenty to last you through the week!
You'll need the following basic ingredients:
- 10 cups of sugar
- 4 cups of water
- The juice of 20 freshly squeezed limes or lemons (whichever you prefer).
Next, follow this simple method to make the concentrate or syrup.
Start off by rolling your limes on a hard surface and push down on them with your hands, as this will soften them just a little. Next, squeeze the juice from the limes/lemons and extract as much as you can.
Your following step is to pace your sugar and water in a pan. Bring the mixture to the boil. Pour the lime juice through a strainer into the sugary water in your pan and let it simmer for at least ten minutes.
When it's ready, it should form a thick syrup. Let the syrup cool down and store it in a sealed bottle which you can keep in the fridge.
Now it's ready for you to use so that you can continue to the next step to make the sharbat.
Simply pour a three-quarter pint of water into a jug and add one cup of your lime/lemon syrup. Stir it well, add a few ice cubes and a sprig of mint, and there you have it – sharbat e ablimu.
